Instant Pot Chicken & Wild Rice with Veggies {Recipe}

We are still loving our Instant Pot! With busy summer schedules…running to ball practices, games, the pool and other outings…having quick and easy meals to make has been wonderful!

I love that I can throw a whole meal (including veggies, meat and noodles or rice) and have it ready in just minutes! One pot to clean and a quick turn around = every busy family’s dream!

One of the most recent recipes we tried that I wanted to be sure and share, was a Chicken & Wild Rice with Veggies!

Ingredients:

2 T Olive oil
1 T minced onion
1 1/2 T minced garlic
2 cups carrots, diced
2 1/2 cups wild rice, raw
2 1/4 cups chicken broth
2 pounds boneless, skinless chicken breasts (we used 5 thin ones that would cook faster)
Salt and pepper to taste
10 ounce cream of chicken soup
2 tablespoon Worcestershire sauce
2 tsp thyme seasoning

Directions
1. Push “saute” button on Instant Pot. While it heats, add the oil, garlic, onion and carrots.

2. Turn off sauté and add rice and broth into the pot. Place chicken breasts on top of that (add salt and pepper to taste) and cover with cream of chicken soup and Worchestershire sauce. Add the thyme seasoning over the top.

3. Seal the Instant Pot, close the vent, and press manual (high pressure) for 26 minutes!

4. Once the pot is done cooking, Quick Release pressure.

5. When pressure is released, open the lid and shred the chicken right in the pot. Then mix everything well and serve.

I loved being able to throw it all in raw and have time do some laundry and finish getting ready for my son’s baseball game while it quickly cooked. It was really¬†good and something our whole family loved! Next time I may throw in some corn or celery. It’s a very customizable recipe.

 

5. When pressure is released, open the lid and shred the chicken right in the pot. Then mix everything well and serve.
